Whipped Red Pepper Cashew Spread [Food Processor Attachment]
Great alternative to hummus with fresh flavors. Use freshly squeezed lemon juice to get the best taste!
Ingredients
- 275 g (2 cups) roasted cashews
- 60 ml (¼ cup) extra virgin olive oil
- (5 ) roasted garlic
- 110 g (½ cup) roasted red pepper, drained
- 30 g (1 bunch) Italian flat leaf parsley, leaves only
- (1 ) lemon, zested and juiced
- (½ teaspoon) kosher salt, optional
- (¼ teaspoon) ground black pepper
Directions
- Cover cashews with warm water and leave to soak for 15 minutes. Drain and rinse the cashews.
- Place all ingredients into the Food Processor Work Bowl fitted with the Multi-Use Blade. Secure the lid.
- Start the machine and allow to process for 2 minutes, or set timer and allow machine to complete programmed cycle. Store in an airtight container until used
