We all know we need to eat our vegetables, but it’s not always easy to follow through. Luckily, your Vitamix blender makes it simple to prepare tasty breakfast foods with plenty of veggie-packed power.
Smoothies
Many people drink smoothies because they’re a great way to get in some vegetables. They’re quick, simple, and hit the spot. Plus, for people who don’t like the taste of veggies, fruit and other additions can often mask vegetables’ flavor.
We have plenty of recipe options on our site, including our dairy-free Banana Raspberry Green Smoothie, our Emerald Smoothie with pineapple, and our Good Morning Green Smoothie, a raw food option made with fruit and broccoli.
You can always take one of our fruit-based smoothie options and add your own vegetables or create a smoothie from scratch. One thing to consider is keeping orange and red foods together and green and yellows together. If you mix foods across these color groups, your smoothie will likely turn out brown—possibly still delicious, but not the most appealing-looking drink.

Quick Tip
One of our favorite smoothie time-saving tips is to plan ahead. After washing and drying your produce, freeze each recipe’s fruits and vegetables together in packets, then simply pull them out and add them to your blender (with your favorite liquid) when you’re ready to use them.

There are many great things about using your Vitamix as your go-to smoothie-making machine. First, you can throw in whole ingredients—no chopping or peeling required, except to remove inedible seeds, pits, and rinds.
Secondly, our strong blades and high speeds blend everything until it’s completely smooth, even pulverizing tiny ingredients like raspberry seeds.
Lastly, cleanup’s a breeze. Fill your container halfway with warm (not hot) water and add a couple of drops of dish detergent. Next, depending on your machine, blend on High for 30-60 seconds or use the Clean setting, which will stop automatically. Then rinse the container out, and let it air dry. Done in only a minute or two!

If you want a veggie-filled breakfast you can really sink your teeth into, eggs are a great option. To make an omelet, put whole vegetables into your Vitamix (blender or food processor) and give them a quick chop. You can also whip the eggs in your container or with the Vitamix Immersion Blender. To make an egg white omelet, just remove the egg yolks and blend.
For a new take on a traditional favorite, our zucchini pancakes are a fun and healthy way to incorporate vegetables into your morning meal (and can be vegan-friendly as well). Along the same lines, spinach and flax crepes can be filled with sweet or savory ingredients.
Another veggie option includes adding a side dish. To give your breakfast or brunch a kick, try this spicy chimichurri marinade, then pour it over your favorite roasted vegetables.
