Crema de calabaza bellota y manzana
Deliciosa sopa preparada con manzanas frescas y calabaza bellota de la cosecha de otoño.
Ingredientes
- 420 g (3 tazas) de calabaza bellota pelada, sin semillas y cortada en cubos de 1"
- 1 cucharada de aceite de oliva (opcional)
- ½ cebolla pequeña (60 g) pelada
- 1 diente de ajo partido a la mitad
- ½ manzana (90 g) partida a la mitad y sin semillas
- ¼ de cucharadita de tomillo seco
- ⅛ de cucharadita de sal
- 2 tazas (480 ml) de caldo o consomé de verduras bajo en sodio
Instrucciones
- Cueza la calabaza en una olla de vapor o en el microondas hasta que quede tierna. Sofría la cebolla y el ajo hasta que la cebolla esté transparente y blanda.
- Vierta todos los ingredientes en el vaso de la Vitamix en el orden indicado y cierre bien la tapa.
- Encienda la licuadora en la velocidad más baja y luego increméntala rápidamente hasta llegar a la máxima. Licúe durante 3 a 5 minutos o hasta que empiece a salir mucho vapor a través del orificio del tapón de la tapa.
Notas
Si mezcla ingredientes recién cocidos y todavía calientes, el tiempo de mezclado se reduce varios minutos y le permite tener la comida en la mesa mucho más rápido.

Delicious Recipe (with a few modifications)
This recipe is a great starter, a very healthy and filling meal. The only modifications I made were using 4 sprigs of dried thyme, medium onion instead of a small one, twice as much garlic, and I added some chopped fresh rosemary as I was sauteeing the onions and garlic. This gave the soup a lot of good flavor. I also steemed 2 acorn squash (which was probably more than 3 cups full) and added all of the steemed squash to the soup. This helped cut down the acidity but made the soup sweeter. Both ways yielded delicious results!

This soup is terrific! And it's incredibly healthy, which is rare in soups that usually use cream bases. Well done!

Good, rich soup
Good soup the is very thick and savory. Good to make in advance and take for lunches. Very filling. This soup is not sweet at all - so if you are looking for a slightly sweet soup this would not be for you. However, if you are looking for a rich savory soup, this soup will probably work.

Very good soup
I followed the recipe exactly as written. It turned out a very good base but I felt like it needed more salt. I would add a quarter to a 3rd teaspoon of salt. I'm not sure I will make it again because cutting in preparing a fresh, hard acorn squash was quite a job.

Disappointed
This soup was so disappointing. Followed directions. Want to return blender, but husband feels I should give it another try.
