Ingredientes

4 large eggs, pasteurized
¾ cup 150 g granulated sugar
½ teaspoon canela molida
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
¾ cup 180 ml brandy, or mixture of 1/2 brandy + 1/2 bourbon
1 ½ tazas 180 ml whole milk
1 taza 240 ml Crema espesa

Place all eggs into the Aer® Disc container and secure the lid. Start the blender on its lowest speed, then increase to its Variable 5 for 30 seconds.
With blender running, remove lid plug and slowly add sugar blending an additional 20 seconds once sugar is added. Stop the machine.
Add cinnamon, nutmeg, clove, brandy, milk and heavy cream. Start the blender and increase to Variable 5 blend for 15 seconds or until combined.
Transfer to an airtight container and chill thoroughly to allow flavors to combine. Stir before serving adding some of the foam to each drink with a sprinkle of ground nutmeg on top immediately before serving.
