Choose your favourite herbs to create a zesty aioli to use as a dressing, marinade or dip.
- 2 large pasteurized egg yolks
- 1 teaspoon Dijon mustard
- 1 Tablespoon fresh herbs, chopped
- 1½ Tablespoon lemon juice
- 180 ml (¾ cup) olive oil
- salt and pepper, to taste
- Place the egg yolks, mustard, herbs and lemon juice into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 3.
- Blend for 8 seconds or until combined.
- Remove lid plug and slowly add oil in a thin steady stream. Add salt and pepper and blend for 40 to 45 seconds or until emulsified and smooth.
