Caribbean Dry Rub

Caribbean Dry Rub


  • 30 g (2 Tablespoons) kosher salt, optional
  • (2 Tablespoons) dried thyme
  • (1 teaspoon) ground allspice
  • (2 teaspoons) red pepper flakes
  • (1 teaspoon) garlic powder
  • (½ teaspoon) ground cloves
  • (¼ teaspoon) dry mustard
  • 100 g (½ cup) coconut sugar [or date sugar]


  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 10 seconds, using the tamper to push ingredients toward the blades.

Chef's Notes

  • Use this dry rub to make amazing jerk chicken, roasted vegetables or as a general seasoning.Using alternative sugars and lowering the overall amount used versus a traditional seasoning is a great way to start creating healthier dishes.
