Spinach and Chive Cauliflower Hummus
Whether you can't eat legumes or you're cutting carbs, we've got you covered with this dip. Steamed cauliflower takes the place of garbanzo beans in this "hummus," and is keto-friendly, low-carb, and still delicious.
Ingredients
- (2 Tablespoons) extra virgin olive oil
- 50 g (2 cups) lightly packed baby spinach
- 15 g (1/2 cup) fresh chives
- (1 ) garlic clove, peeled
- 36 g (1/4 cup) sesame seeds
- 450 g (4 cups) cauliflower, cut into florets
- (1 teaspoon) kosher salt, optional
Directions
1. Briefly steam or boil the cauliflower, about 3-5 minutes or until just tender, then shock in an ice water bath. Drain well and dry completely.
2. Place all ingredients into the Vitamix container in the order listed and secure the lid.
3. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, using the tamper to press ingredients toward the blades. Serve immediately, garnishing as desired - we like serving with celery and carrot sticks.
