Winter Spice Vinaigrette
Roasted garlic add depth of flavor to this wintery dressing.
Ingredients
- 180 ml (¾ cup) apple cider vinegar
- 30 ml (2 Tablespoons) Dijon mustard
- (8 ) roasted garlic cloves
- 30 g (1 small) shallot, peeled, roasted
- (3 ) medjool dates, pitted [or honey to taste]
- (1 Tablespoon) Winter Spice Seasoning
- (1 sprig) fresh rosemary, leaves
- 480 ml (2 cups) extra virgin olive oil
Directions
- Place all ingredients except olive oil into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades.
- Blend for 30 seconds.
- Reduce to Variable 6, remove lid plug and add oil through lid plug opening.
- Replace lid plug and blend an additional 10 seconds.
