Breakfast Chia Pudding

Simple and easy to put together and very versatile, top with fresh fruit, granola or any other topping you'd like.

FPA-Chia-Pudding

Ingredients

  • 1 ½ cups (360 ml) coconut milk
  • ¾ cup (180 ) coconut yogurt [or Greek yogurt]
  • 2 dates, pitted
  • 1 teaspoon vanilla extract
  • ⅓ cup (60 g) chia seed
  • ⅛ teaspoon kosher salt, optional

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 40-50 seconds, using the tamper to push ingredients toward the blades.
  3. Transfer to a bowl cover and refrigerate overnight.  To serve, divide pudding into 4 glasses and top with chocolate and almonds.

  • 3 cups (720 ml) almond milk
  • ½ cup (85 g) chia seeds
  • 2 Tablespoons maple syrup, optional

Directions

  1. Place all ingredients into the Vitamix Food Processor Work Bowl fitted with the Multi-Use Blade and secure the lid. Start machine and process for 60 seconds.
  2. Set timer for 60 seconds. Start machine and allow it to complete the programmed cycle.
  3. Pour into a glass storage container and let sit overnight (at least 12 hours). Adjust with additional almond milk as needed. Top with desired ingredients
