Cherry Chipotle BBQ Sauce

This simple barbecue sauce pairs beautifully with grilled vegetables, ribs, pulled pork, roasted chicken, and salmon.

Ingredients

  • 5 large (700 g) tomatoes
  • ½ (70 g) onion, peeled
  • 1 cup (140 g) dried cherries
  • 6 (50 g) dates, pitted
  • ¼ cup (60 ml) apple cider vinegar
  • 2 Tablespoons chipotle pepper in adobo sauce
  • ¼ teaspoon chili powder
  • 1 teaspoon salt, optional

Directions

  1. Heat char grill to high heat. Place tomatoes and onions on the grill and rotate while cooking. Cook until tomato skins are charred and starting to collapse, and onions begin to soften. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Run the Dips & Spreads Program or start the blender on its lowest speed, then quickly increase to its highest speed.  Blend for 60 seconds, using the tamper to push ingredients toward the blades.
