Fresh Tomato Sauce

The Vitamix chops and purees fresh tomatoes and herbs into a classic Italian sauce.

Fresh Tomato Sauce

Ingredients

  • 16 (1.4 kg) ripe roma tomatoes, halved
  • 1 small (120 g) yellow onion, peeled
  • 1 small (80 g) carrot
  • ¼ cup (60 ml) tomato paste
  • 2 garlic cloves, peeled
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt, optional

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed.
  3. Blend for 30 seconds, using the tamper to press the ingredients toward the blades.
  4. Pour into saucepan and simmer for 35 to 40 minutes or until desired consistency is reached.
