Grandma Carpenter's Apple Cake
Loved for Lifetimes RecipeA heritage recipe from the Vitamix Family: Grandma Carpenter's classic apple cake is done in a Nutritarian style, allowing healthy dessert to be had without the guilt.
Ingredients
- 32 medjool dates, pitted
- ½ cup (120 g) applesauce
- ½ cup (120 g) pumpkin purée
- 4 cups (500 g) diced apples
- 1 cup (120 g) walnuts
- ½ teaspoon kosher salt, optional
- 2 cups (260 g) Whole Wheat Flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
Directions
- Preheat oven to 350°F (175°C). Prepare a 9x13 inch baking dish.Place the dates into a deep bowl, adding just enough boiling water to cover them. Allow to soak for two hours. After soaking, reserve ¼ cup of the liquid, and strain the rest of the water.
- Place the dates and 1/4 cup of reserved liquid into the Vitamix container and secure the lid. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 40–50 seconds. This yields 2 cups of date paste.
- Combine two cups of prepared date paste in a large mixing bowl with the applesauce, pumpkin puree, and salt.
- Add the diced apples and walnuts to the mixture and stir to combine. Add the remaining dry ingredients gradually as you stir, until a uniform consistency is reached with the batter.
- Scoop the mixture into the baking dish. Place in preheated oven and bake for 30 minutes or until a toothpick comes out clean.

- Who doesn't love a dessert that is decadent and delicious? It's just an added bonus that the sweetness comes from the natural sugars of the fruit, no added sugar here!
