Lemon Basil and Edamame "Ricotta" [Immersion Blender]

When edamame is broken down, it can easily replace the texture of ricotta cheese. Adding fresh lemon zest and basil to edamame gives this "ricotta" a deliciously light citrus flavor, perfect for a dip or starter.

Ingredients

  • ½ cup (120 ml) vegetable stock
  • 2 garlic cloves, peeled
  • 1 lemon, zest only
  • 2 Tablespoons pine nuts
  • 1 Tablespoon nutritional yeast
  • 1 bunch (30 g) fresh basil leaves, packed
  • 1 ½ cups (240 g) shelled edamame beans [or frozen-thawed]

Directions

  1. Place all ingredients into the Immersion Chopper Work Bowl fitted with the Chopping Blade and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 45 seconds, stopping to scrape down the sides of the bowl.
  3. Secure the lid and process for an additional 45 seconds or until desired consistency is achieved.
