Lemon Basil and Edamame "Ricotta" [Immersion Blender]
When edamame is broken down, it can easily replace the texture of ricotta cheese. Adding fresh lemon zest and basil to edamame gives this "ricotta" a deliciously light citrus flavor, perfect for a dip or starter.
Ingredients
- ½ cup (120 ml) vegetable stock
- 2 garlic cloves, peeled
- 1 lemon, zest only
- 2 Tablespoons pine nuts
- 1 Tablespoon nutritional yeast
- 1 bunch (30 g) fresh basil leaves, packed
- 1 ½ cups (240 g) shelled edamame beans [or frozen-thawed]
Directions
- Place all ingredients into the Immersion Chopper Work Bowl fitted with the Chopping Blade and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 45 seconds, stopping to scrape down the sides of the bowl.
- Secure the lid and process for an additional 45 seconds or until desired consistency is achieved.
