Olive Tapenade

Use as a dip for bread to complement a cheese tray.

Ingredients

  • 4 Tablespoons (60 ml) olive oil, optional
  • 2 Tablespoons fresh lemon juice
  • ¼ cup (45 g) capers, drained
  • 4 Tablespoon fillets
  • 2 Tablespoon garlic, peeled
  • 6 Tablespoon basil leaves
  • 1 pound (455 g) mixed olives, pitted

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select Variable 1 and star the machine. Slowly increase speed to Variable 5 and blend for 30-35 seconds, using the tamper to press the ingredients into the blades.
