Peach, Matcha Green Tea And Blueberry Popsicle

A refreshing balance of fresh peaches and blueberries, with the added health benefits of matcha green tea powder.

Ingredients

  • 2 cups (250 g) peaches, pitted
  • 2 cups (275 g) fresh blueberries
  • ¼ cup (60 ml) water
  • 6 dates [or 2 Tablespoons honey]
  • 1 cup (240 ml) plain dairy free yogurt [or 0% Greek yogurt]
  • 6 dates [or 2 Tablespoon honey]
  • ¼ teaspoon matcha green tea powder

Directions

  1. Cook peaches over medium heat for about 5 minutes, or until softened. 
  2. Place peaches into the Vitamix container and secure lid.
  3. Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades.  
  4. Blend for 30 seconds.  Transfer to a bowl and allow to cool.
  5. Combine fresh blueberries, water, and dates in a small saucepan and cook over medium heat for about 5 minutes.
  6. Place blueberry mixture into the Vitamix container and secure lid.
  7. Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades.  
  8. Blend for 30 seconds. Transfer to a separate bowl and allow to cool.
  9. Add yogurt, dates and matcha powder into the Vitamix container and secure lid.
  10. Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades.  
  11. Blend for 30 seconds.
  12. To assemble Popsicles: Divide peach puree evenly into Popsicle mold. Layer the matcha mixture on top of the peach. Layer the blueberry mixture on top of the matcha.  Place Popsicle sticks in the center of each mold and freeze.
