Snowballs

Powdered sugar coats these light and airy cookies, which are just as fun to form as real snowballs.

Ingredients

  • ¾ cup (90 g) walnuts
  • 2 ¼ cups (280 g) all-purpose flour
  • 1 cup (175 g) Earth Balance margarine
  • 1 teaspoon (1 teaspoon) vanilla extract
  • ¼ teaspoon (0.25 teaspoon) salt, optional
  • 1 ½ cups (180 g) powdered sugar, Divided use

Directions

  1. Heat the oven to 375°F (190 °C).
  2. Place nuts verify what type of nuts into the Vitamix container and secure lid.
  3. Select Variable 1.
  4. Blend for 10 seconds. Remove to a bowl.
  5. Start the machine, and slowly increase speed to Variable 4.
  6. Place half the flour, half the margarine, vanilla, salt, optional, 1/2 cup powdered sugar, remaining margarine, and remaining flour into the Vitamix container in the order listed and secure lid.
  7. Select Variable 1.
  8. Start the machine, and slowly increase speed to Variable 5.
  9. Blend for 10 to 15 seconds, using the tamper to press the ingredients into the blades.
  10. Transfer to the bowl with the nuts verify what type of nuts and stir to incorporate.
  11. Shape the dough into 1-inch (2.5 cm) balls and place about 1 inch (2.5 cm) apart on an ungreased cookie sheet.
  12. Bake 10 to 12 minutes until set but not brown. Remove to cool for 10 minutes.
  13. Roll the warm cookies in 1 cup of sifted powdered sugar and cool on a wire rack.
