Spring Citrus Smoothie [Immersion Blender]

Fruits and greens make this smoothie a great start to your morning or a tasty afternoon pick-me-up. A full container ensures you have enough to share with others or have plenty for the busy week ahead.

Ingredients

  • ½ cup (75 g) frozen mango chunks
  • 1 ½ cups (40 g) baby spinach, lightly packed
  • 1 cup (165 g) pineapple, with core
  • ⅓ cup (55 g) English cucumber, about 5-6 slices
  • 1 slice (15 g) lime, 1/4" thick
  • ¼ medium (30 g) honeycrisp apple, chunked
  • 1 small (90 g) oranges, peeled, and halved
  • 1 cup (240 ml) ginger kombucha

Directions

  1. Place all ingredients into an appropriately sized container. Submerge the immersion blender below the surface of the liquid, or as close to the ingredients as possible.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Move the immersion blender around, including up and down, to blend the ingredients for approximately 90 seconds or until desired consistency is achieved. Strain if desired.
  3. This recipe works great in the Vitamix immersion blend jar.

Chef's Notes

  • Ginger kombucha brings a spicy note and more complexity to a smoothie than just adding water. It can be easily switched out for any liquid of your choice.
  • A perfect way to eat the rainbow!
