Alba Huerta’s “Low Country”

Ingredients

  • Absinthe mist
  • 1½ ounces cachaça (preferably Novo Fogo)
  • 1 ounce Toasted Rice Cream (See Recipe Below)
  • ½ ounce fresh lime juice
  • ¼ ounce turbinado syrup
  • Absinthe mist
  • Cinnamon, for garnish

Directions

  1. Mist a small brandy glass with absinthe and fill with crushed ice. Set aside.
  2. Shake cachaça, Toasted Rice Cream, lime juice, and turbinado syrup and pour into prepared glass. 
  3. Garnish with grated cinnamon.

Toasted Rice Cream

Ingredients

  • 2 cups rice (preferably Carolina Gold rice)
  • 1 liter filtered rice milk
  • 8 ounces turbinado sugar
  • 8 ounces whipping cream
  • 1 ounce overproof rum

Directions

  1. Lightly toast rice over medium heat until golden brown.
  2. Place 32 ounces water (16 ounces should be filtered) and toasted rice into the Vitamix container in the order listed and secure lid.
  3. Select Variable 1.
  4. Start machine and slowly increase to its highest speed.
  5. Blend for 3 minutes.
  6. Pour mixture into a sealed container and refrigerate overnight. 
  7. Filter rice milk through a cheese cloth. This should yield approximately 1 liter.
  8. Add rice milk, turbinado sugar, and whipping cream to a medium sauce pan over low heat. Simmer until dissolved, stirring frequently.
  9. Allow to cool and add overproof rum to fortify.
