Cashew Cream Cheese on Toast with Morels & Ramps
Caramelized seasonal vegetables accent our savory Cashew Cream Cheese spread on this classy & nutritious toast.

Ingredients
- (1 Tablespoon) olive oil
- 113 g (4 ounces) fresh morel mushrooms, cleaned and trimmed
- 170 g (6 ounces) fresh ramps [or pearl onions], cleaned and trimmed
- (3 ) garlic cloves, peeled and crushed
- (6 sprigs) fresh thyme leaves
- (¼ teaspoon) kosher salt, optional
- (¼ teaspoon) ground black pepper
- 60 ml (¼ cup) dry white wine
- 400 g (8 slices) rustic bread, toasted
- 120 ml (½ cup) Savory Cashew Cream Cheese
Directions
- Heat olive oil in a medium skillet over medium heat. Once hot, add morel mushrooms, ramps, garlic, and 4 of the thyme sprigs. Season with salt (if using) and black pepper. Sauté for 6–8 minutes, or until softened and beginning to brown.
- Deglaze the pan by adding the white wine. Cook, stirring and scraping the pan, until most of the wine has cooked off. Take pan off heat. Discard thyme sprigs.
- Spread Cashew Cream Cheese on each piece of toasted bread. Top each with a spoonful of the sautéed mushroom mixture. Pick the remaining 2 sprigs of thyme and sprinkle the leaves over the toasts. Serve immediately.
