Cauliflower Parsnip Purée
This purée is a great alternative with bold flavor to traditional mashed potatoes.
Ingredients
- 450 g (1 pound) cauliflower, cut into florets
- 225 g (½ pound) parsnips, large chop
- (1 teaspoon) prepared horseradish
- (1 Tablespoon) extra virgin olive oil
- (½ ) lemon, zested, juiced
- (1 teaspoon) kosher salt, optional
- (½ teaspoon) ground black pepper
Directions
- Boil the cauliflower and parsnips until tender (about 10–15 minutes). Drain.
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Run the Dips & Spreads Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, using the tamper to push ingredients toward the blades. Serve warm.
