Egg Salad [Food Processor Attachment]
A simple, classic recipe that can be made easily in one food processing bowl. No need for multiple dishes and containers. Personalize it to make it your own!
Ingredients
- 125 g (½ medium) white onion, peeled, halved
- 115 g (2 ) celery stalks, cut into 3" pieces
- 12 g (½ bunch) Italian flat leaf parsley, leaves only
- 30 ml (2 Tablespoons) Dijon mustard
- 120 ml (½ cup) Vegan Mayonnaise [Food Processor Attachment]
- (1 teaspoon) kosher salt, optional
- (¼ teaspoon) ground black pepper
- 500 g (10 ) hard boiled eggs, peeled
Directions
- Fit the Food Processor with the Multi-Use Blade.
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Pulse the mixture 8-10 times until evenly chopped or desired consistency is reached.
Chef's Notes
- Any array of spices can be added to this recipe to make it your own; paprika, dill, harissa, nutmeg, szechuan peppercorns using your Vitamix blending container to make fresh spice grinds.
