Olive Tapenade

Use as a dip for bread to complement a cheese tray.

Ingredients

  • 60 ml (4 Tablespoons) olive oil, optional
  • Tablespoon (2 Tablespoons) fresh lemon juice
  • 45 g (¼ cup) capers, drained
  • Tablespoon (4 Tablespoon) fillets
  • Tablespoon (2 Tablespoon) garlic, peeled
  • Tablespoon (6 Tablespoon) basil leaves
  • 455 g (1 pound) mixed olives, pitted

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select Variable 1 and star the machine. Slowly increase speed to Variable 5 and blend for 30-35 seconds, using the tamper to press the ingredients into the blades.
