Peach Bellini

A smooth, peach purée is the base for this festive, Italian champagne cocktail.

  • 120 ml (½ cup) water
  • (1 Tablespoon) fresh lemon juice
  • 75 g (6 Tablespoons) granulated sugar
  • 455 g (1 pound) peaches
  • (Champagne chilled)


  1. To make the peach purée, place water, lemon juice, sugar, and peaches into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 1 minute.
  5. Place 1 Tablespoon of peach purée in the bottom of a champagne flute and fill with Champagne.
  6. Stir lightly to combine.
