Pistachio & Orange Butter

Ingredients
- 300 g (2½ cups) pistachios
- 70 g (5 Tablespoons) coconut oil
- orange zest, from ½ orange
- (1 teaspoon) vanilla bean paste, or vanilla powder
- 1-2 tbsp. maple syrup, optional
Directions
- Put pistachios on a baking tray in a pre-heated oven at 350°F (180°C) for 5-10 minutes, checking regularly to make sure that they don’t burn. Remove and leave to cool completely.
- Place pistachios into your Vitamix container and secure the lid. Start the machine on its lowest speed, then quickly increase to its highest speed. Blend for 1 minute, or until pistachios are smooth. on speed 1 for 5 minutes.
- Through the lid plug, add the coconut oil through the lid plug, or stop the machine, remove the lid and add. Blend for an additional minute. Now add the vanilla and orange zest, blending until combined. You can also add a sweetener like maple syrup now if you want, however, this is optional. Pour into a glass jar, label, and enjoy!
