Pomegranate Beet Smoothie

Pomegranate and beets are showcased in this smoothie, which also includes nutritious spinach and parsley.

Ingredients

  • 70 g (½ cup) ice cubes
  • 30 g (½ ) small beet, washed
  • 5 g (2 Tablespoons) Italian flat leaf parsley
  • (½ large) orange, peeled, halved
  • (¼ large) lemon, peeled
  • 60 g (2 cups) fresh spinach
  • 5 g (1 ) piece fresh ginger root, 1/4" slice
  • 120 ml (½ cup) pomegranate juice

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the blade base.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed.
  3. Blend for 45 seconds or until desired consistency is reached, using the tamper to push ingredients towards the blades
