Pumpkin Brownies

Brighten the flavor of these brownies with more spice, fresh ginger, or orange zest.

Ingredients

  • 120 ml (½ cup) egg substitute [or 4 eggs]
  • 150 g (15 ) medjool dates, pitted
  • 240 ml (1 cup) Applesauce
  • 420 ml (1 ¾ cups) Pumpkin Purée
  • 240 g (2 cups) whole wheat flour
  • (2 teaspoons) baking powder
  • (1 teaspoon) baking soda
  • (1 teaspoon) salt, optional
  • (2 teaspoons) Pumpkin Spice

Directions

  1. Preheat oven to 350°F (175°C).  Place egg substitute, dates, applesauce and pumpkin puree into the Vitamix container in the order listed and secure the lid.
  2. Run the Dips & Spreads Program or start the blender on its lowest speed, then quickly increase to its highest speed.  Blend for 60 seconds, using the tamper to push ingredients toward the blades.
  3. Remove the lid and add the flour, baking powder, baking soda, pumpkin pie spice and salt to the container. Secure the lid.
  4. Select Variable 8. Pulse the machine 10-12 times, using the tamper to press ingredients toward the blades.
  5. Transfer mixture to a greased 9x9 inch (23x23cm) non-stick square baking pan.
  6. Place in preheated oven and bake for 30 minutes or until a toothpick comes out clean
  7. To serve, cut brownies and sprinkle with your favorite topping.

Chef's Notes

Flax eggs work great as an egg replacer. To make a flax "egg," simply combine your flax meal (1 Tbsp. flax to 3 Tbsp. water) with water in a small container and stir to combine, and allow it to sit for 5 minutes before using.

  • Tablespoon (1 teaspoon) baking soda
  • Tablespoon (1 teaspoon) salt, optional
  • Tablespoon (2 teaspoons) pumpkin spice

  6. Bake brownies for 30 minutes in a 350°F (175°C) oven, or until a toothpick inserted in the center comes out clean.
  7. To serve, cut brownies and sprinkle with your favorite topping.
