Apricot Brown Rice Cereal

Combine sweet apricots with heart-healthy whole grains in this complete breakfast.

Ingredients

  • 840 ml (3½ cup) water
  • Tablespoon (½ teaspoon) salt, optional
  • Tablespoon (8 Tablespoon) apricots
  • 15 g (2 Tablespoons) sunflower seeds, unsalted
  • Tablespoon (¼ teaspoon) almond extract
  • 200 g (1 cup) brown rice, uncooked

Directions

  1. Place brown rice into the Vitamix container and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 7 or 8.
  4. Grind to desired degree of fineness, about 10 seconds. If a finer cereal is desired, grind longer.
  5. In a saucepan, heat salted water to boiling. Slowly add cracked rice to boiling water, stirring constantly with a wire whisk.
  6. Reduce temperature to low, cover and simmer for 15-20 minutes, stirring frequently.
  7. While rice is cooking, chop apricots in the Vitamix container. Secure lid and remove the lid plug.
  8. Select Variable 1.
  9. Turn machine on and slowly increase speed to Variable 5 or 6. While machine is running, drop apricots through the lid plug opening until roughly chopped.
  10. Turn the stove off and add chopped apricots, sunflower seeds and almond extract to the cooked cereal, stir. Cover and let stand for an additional 5 minutes.
