15 ounces 427 g corn masa flour
½ cuillère à soupe baking powder
¾ teaspoon baking soda
1 cuillère à soupe 14 g cane sugar
3 ½ cups 840 g buttermilk [or milk of choice]
3 large œufs
6 ounces 170 g unsalted butter, About 1 and 1/2 sticks, melted
1 cuillère à thé d' kosher salt, optional

Preheat the oven to 375°F (190° C). Place a seasoned 12-inch cast iron skillet in oven to preheat.
Fit the Food Processor with the Multi-Use Blade. Add all of the dry ingredients to the Vitamix container and secure the lid. Pulse the mixture several times until dry ingredients are well mixed.
Reserve 1 Tablespoon of melted butter. Add remaining wet ingredients (eggs, buttermilk, butter) to the dry ingredients in the Vitamix container and secure the lid. Pulse until just mixed.
Use remaining butter to coat cast iron skillet or a 9-inch x 13-inch baking pan. Scrape in batter. Smooth out. Bake until golden brown on top and a toothpick or fork inserted into center pulls out cleanly. About 35–45 minutes
Let cool for 10–15 minutes. Serve or cool completely and reserve for another use.
