Broccoli Cheese Soup
This cheesy favorite is ready in just 6 minutes. Ladle over steamed broccoli pieces for added texture.
- 1 cup (240 ml) milk
- ½ cup (55 g) low fat cheddar cheese, shredded
- 1½ cup (135 g) broccoli, steamed
- 1 teaspoon onion, peeled, diced
- ½ bouillon cube
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 5-6 minutes or until heavy steam escapes from the vented lid.
Serve over additional steamed broccoli pieces. (optional)

Here's my version: 12 oz can of fat free evaporated milk 1 tsp better than bouillon reduced sodium chicken flavoring dissolved in a cup of boiling water 2-3 Tbl chopped sweet onion 3 small sweet peppers 1/2 to 3/4 cup shredded sharp cheddar cheese 2/12 to 3 cups steamed cauliflower Generous grind of black pepper Pinch of red pepper flakes I forgot to keep some of the cauliflower aside to add after blending, and would consider adding in some small diced potatoes as well, but the flavor and consistency were outstanding! Very pleased!

I used all the ingredients according to the recipe, using only uncooked cauliflower in the soup, and increased the onion to a whole medium yellow onion-chopped. Because we like our food a little more spicy than most recipes suggest, I added extra spices - 2 cloves of garlic plus about 2 teaspoons of garlic powder, chipotle salt blend, smoked sea salt and pepper to taste, and a small amount of soy sauce. I poured the soup over steamed broccoli; however, next time I will pulse the broccoli into the soup. This soup was so easy and filling. It was a complete meal for 2 on a Monday night!

Rated 1 out of 5 by Chris_S from Over powering I made this for my husband &I to have for a healthy lunch at work. First off, the broccoli taste was so over whelming, neither of us could tolerate it. You couldn't taste the cheese or anything else that was in it. I didn't have any other option for lunch available, so I added some salt and a ton of saltine crackers just so I had something to eat. The texture of it was the second thing that turned us both off. If not eaten immediately, it separates to two very distinct layers. And once separated, they really don't mix well back together. Unless I tweak the recipe and eat it immediately, I don't think I will make this again.

Rated 5 out of 5 by kjdo from AMAZING I fixed this almost like the recipe, but I don't have anything diet in the kitchen. So it was 1 cup of raw whole milk, 1/2 cup of shredded co-jack cheese. I steamed 2 cups of Broccoli/Cauliflower mix. I sautéed one onion slice (diced), 6 grape tomatoes slices and a little garlic. I used 1 1/2 cups of the veggies and the sautéed onion mixture in the blender to start with and then the last 1/2 cup of veggies were added and blended to make the soup chunky. Serving it with a little extra grated cheese on top. YUMMY!!!

I used this recipe, then added another cup of steamed broccoli and about 6 cherry tomatoes, and rough chopped them (setting of 2, pulse 3-4 times) to make the soup chunky. I held back a little bit of the cheese from the recipe to sprinkle on as a garnish, added some broken up tortilla chips and a teaspoon of salsa to each bowl. Dee-licious!

I sautéed some tomatoes and garlic in olive oil and added that and a little more broccoli at the end and then just used pulse 4 or 5 times to give it some added thickness and it turned out really great! Highly recommend this recipe.

How can I convert a recipe for a 'C' series blender to a 'G' series. I have recently purchased my Vitamix and trying to learn how best to use.
This recipe should work great in your new g series style container. Can anything else be used in place of the chicken bouillon?
For this soup you can replace the skim milk with Vegetable or Chicken stock and you will have a delicious soup.

Can this soup be frozen after I make it?
I do not recommend freezing this soup. When reheating the milk and cheese it may separate. This soup can be held in the refrigerate for 3-4 days.

Is the ingredient listed near the end as 1/2 chicken or vegetable bullion supposed to be 1/2 cup?
No it is a half of a chicken bouillon cube or half of a vegetable bullion cube.

Is steaming the broccoli necessary or is it okay to just put frozen broccoli directly into the Vitamix? Thank you.
I made this recipe but didn't read the fact that the broccoli needs to be steamed; it tasted like I was eating grass. I will try again and follow the recipe exactly next time....
