Apple-Raisin Cracked Wheat Cereal

With whole kernel wheat, apples, raisins, and cinnamon, this cereal offers whole grain goodness in every spoonful.

Apple-Raisin Cracked Wheat Cereal

Ingredients

  • 1 cup (180 g) whole wheat kernels
  • 1 ½ cups (360 ml) water
  • ¼ teaspoon salt, optional
  • 1 (170 g) granny smith apple, peeled, seeded, quartered
  • ⅛ teaspoon ground cinnamon
  • ½ cup (75 g) raisins
  • 2 Tablespoons sunflower seeds

Directions

  1. Place whole wheat kernels into the Vitamix container and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to  Variable 7. Blend for 15  seconds, using the tamper to push ingredients toward the blades.. Grind to desired degree of fineness.
  3. In a saucepan, add water and salt (if using), and heat until boiling. Slowly add cracked wheat to boiling water, stirring constantly with a wire whisk. Reduce temperature to low, cover, and simmer for 15 to 20 minutes, stirring frequently.
  4. While cracked wheat is cooking, secure the lid on the empty Vitamix container and remove the lid plug.
  5. Start the blender on its lowest speed and increase speed to Variable 4. While the machine is running, drop apple quarters through the lid plug opening, using the tamper as needed to press the ingredients toward the blades, chopping the apples.
  6. Remove the saucepan from the heat and add the chopped apple, cinnamon, raisins, and sunflower seeds to the cooked wheat. Stir to combine.  Cover and let mixture stand for an additional 5 minutes before serving.
