Basic Vinaigrette

A simple pantry recipe, this dressing can be thrown together at the last minute for dinner in a pinch.

Basic Vinaigrette


  • ½ cup (120 ml) red wine vinegar
  • 2 teaspoons Dijon-style mustard
  • ½ teaspoon ground black pepper
  • 1 teaspoon (3 g) salt, optional
  • 1½ cup (360 ml) olive oil


  1. Place vinegar, mustard, pepper, and salt into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 5. Remove lid plug and drizzle olive oil in a slow stream through the lid plug opening.
  4. Replace lid plug and slowly increase speed to Variable 10, then to High. Blend for an additional 10 seconds.
