Cashew Cream Cheese on Toast with Morels & Ramps

Ingredients

  • 1 Tablespoon olive oil
  • 4 ounces (113 g) fresh morel mushrooms, cleaned and trimmed
  • 6 ounces (170 g) fresh ramps [or pearl onions], cleaned and trimmed
  • 3 garlic cloves, peeled and crushed
  • 6 sprigs fresh thyme leaves
  • ¼ teaspoon kosher salt, optional
  • ¼ teaspoon ground black pepper
  • ¼ cup (60 ml) dry white wine
  • 8 slices (400 g) rustic bread, toasted
  • ½ cup (120 ml) Savory Cashew Cream Cheese

Directions

  1. Heat olive oil in a medium skillet over medium heat. Once hot, add morel mushrooms, ramps, garlic, and 4 of the thyme sprigs. Season with salt (if using) and black pepper. Sauté for 6–8 minutes, or until softened and beginning to brown.
  2. Deglaze the pan by adding the white wine. Cook, stirring and scraping the pan, until most of the wine has cooked off. Take pan off heat. Discard thyme sprigs.
  3. Spread Cashew Cream Cheese on each piece of toasted bread. Top each with a spoonful of the sautéed mushroom mixture. Pick the remaining 2 sprigs of thyme and sprinkle the leaves over the toasts. Serve immediately.
