Chickpea Mint Spread
Serve this recipe with pita chips, a vegetable tray, or as a sandwich spread.
Ingredients
- 1 can (254 g) chickpeas, drained and rinsed, reserve 3 ounces of liquid
- ¼ cup (60 ml) extra virgin olive oil, optional
- 12 small garlic cloves, roasted
- 10 fresh mint leaves
- 1 teaspoon salt, optional
- ½ teaspoon ground black pepper
Directions
- Place all ingredients into the Vitamix container and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 1 minute, using the tamper to press ingredients toward the blades.
- Serve immediately.
