Citrus Poppyseed Fruit Salad

Even if your fruit is slightly underripe, adding a combination of coconut water, lime, and honey helps to add some sweetness - and the poppy seeds add a nice crunch. This salad works great as a traveling snack or for a picnic.

Ingredients

  • 1/2 cup (120 ml) coconut water
  • 1 lime, zest and flesh only
  • 3 Tablespoons (45 ml) honey
  • 2 Tablespoons poppy seeds
  • 3 pounds diced apples, or pineapple, blackberry, kiwi, blueberry, or fruit of choice

Directions

1. Place the coconut water, lime zest and peeled lime into the Vitamix container in the order listed and secure the blade base.

2. Start the machine on its lowest speed, then quickly increase to its highest speed, blending for 30 seconds, or select the Smoothie Program and allow the machine to complete the programmed cycle.

3. Add the poppy seeds to the container and stir to incorporate. Let sit for 15-20 minutes to allow the poppy seeds to hydrate. Then, toss gently with the fruit to coat, and refrigerate until ready to serve.
