Creamy Avocado Pasta Salad
Avocado gives this pasta salad its creaminess and adds fiber, healthy fats, and vitamins. A great dish for warmer weather, this pasta salad fills you up without weighing you down..
Ingredients
- For the Dressing::
- 1 ½ cups (360 ml) water
- 3 (350 g) ripe avocado, peeled, pitted
- 1 teaspoon dried onion flake
- ½ teaspoon granulated garlic
- 10 fresh basil leaves
- ½ teaspoon kosher salt
- For the Salad::
- 1 pound (454 g) pasta, cooked, cooled
- ½ (60 g) red onion, sliced thin
- 1 cup (130 g) cherry tomatoes, cut in half
- ½ (145 g) cucumber, diced
- 1 cup (180 g) artichoke hearts, chopped
Directions
- For the Dressing:Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 40-50 seconds, using the tamper to push ingredients toward the blades.
- For the Salad: Toss the avocado basil sauce with the pasta salad ingredients to combine. Hold in an airtight container until serving.
