Eclipse Smoothie Bowl

Dark cherries and blackberries mix with a coconut blend creating a layered smoothie bowl that's perfect for celebrating the eclipse on April 8, 2024.

Ingredients

  • 1½ cups (360 ml) coconut water
  • 12 ounces (335 g) frozen dark sweet cherries
  • 8 ounces (225 g) frozen blackberries
  • 4 ounces (120 g) frozen banana
  • 3 Tablespoons (45 ml) maple syrup
  • ½ teaspoon Chinese five-spice powder

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the blade base.
  2. Run the Smoothie Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 40–50 seconds, using the tamper to push ingredients toward the blades.

  • Did you know that fresh fruits and vegetables are usually frozen at peak ripeness which holds in all the vitamins and minerals?
  • You can also adjust the sweetness by blending without the maple syrup, taste and then add the syrup to your liking.
  • Garnish with Coconut Whipped Topping and coconut flakes to create the ultimate eclipse effect.
