Edamame Guacamole

This guacamole gets a tasty twist when edamame is added for a great nutritional boost.

Ingredients

  • ¾ cup (180 ml) water
  • 1 lime, peeled
  • ½ bunch (25 g) fresh cilantro leaves, stems removed
  • 1 garlic clove, peeled
  • ½ jalapeño, stemmed with seeds
  • 2 (250 g) avocados, peeled, pitted
  • 3 cups (460 g) frozen edamame beans, shelled, thawed
  • 1 teaspoon sea salt, optional

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 40-50 seconds, using the tamper to push ingredients toward the blades.

Chef's Notes

  • If the mixture is too thick add a little water until the desired consistency is reached. Use as a spread on sandwiches or a dip for pita chips and fresh cut or roasted vegetables.
  • The addition of edamame pumps up the protein in this delicious twist on guacamole.
