Edamame Guacamole

This guacamole gives a great twist to the traditional with edamame which adds additional nutritional benefits

Ingredients

  • 3/4 cup (180 ml) water
  • 1 lime, peeled
  • 1 bunch (25 g) fresh cilantro leaves, stems removed
  • 1 garlic clove, peeled
  • 1/2 jalapeño, stemmed with seeds
  • 2 (250 g) avocados, peeled, pitted
  • 3 cups (460 g) frozen edamame beans, shelled, thawed
  • 1 teaspoon sea salt, optional

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades.
  3. Blend for 45 seconds to a minute.

Chef's Notes

  • If the mixture is too thick add a little water until the desired consistency is reached. If you would like to have a less spicy dip remove the seeds from the jalapeno. Use as a spread on sandwiches or a dip for pita chips and fresh cut or roasted vegetables.
  • The addition of edamame pumps up the protein in this delicious twist on guacamole.
