Egg Salad [Food Processor Attachment]
A simple, classic recipe that can be made easily in one food processing bowl. No need for multiple dishes and containers. Personalize it to make it your own!
Ingredients
- ½ medium (125 g) white onion, peeled, halved
- 2 (115 g) celery stalks, cut into 3" pieces
- ½ bunch (12 g) Italian flat leaf parsley, leaves only
- 2 Tablespoons (30 ml) Dijon mustard
- ½ cup (120 ml) Vegan Mayonnaise [Food Processor Attachment]
- 1 teaspoon kosher salt, optional
- ¼ teaspoon ground black pepper
- 10 (500 g) hard boiled eggs, peeled
Directions
- Fit the Food Processor with the Multi-Use Blade.
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Pulse the mixture 8-10 times until evenly chopped or desired consistency is reached.

- Any array of spices can be added to this recipe to make it your own; paprika, dill, harissa, nutmeg, szechuan peppercorns using your Vitamix blending container to make fresh spice grinds.
