- Preheat oven to 300°F (150°C).Line a sheet pan with parchment paper or a silicone baking mat.
- Place almonds, pecans, pumpkin & sunflower seeds, oats, cinnamon, and salt (if using) into the Vitamix container in the order listed and secure the lid.Select Variable 6. Pulse 3 - 4 times, or until chopped to your desired consistency.
- Transfer blend to a large mixing bowl and pour melted coconut oil, vanilla extract, and maple syrup overtop. Toss and thoroughly mix granola until evenly coated.Spread mixture flat onto the prepared sheet pan and bake in the oven for 25 minutes. Granola should be a golden-brown color and feel slightly dry to the touch.
- Allow granola to cool and harden in the pan at room temperature for another 25 minutes. Break into clusters and add the dried cranberries before serving.
