Green Pea Guacamole

A perfect guacamole for when there's no avocado in the house. The peas add a unique sweetness and bright green color.

Ingredients

  • ¼ cup (60 ml) water
  • 1 lemon, peeled
  • ½ teaspoon hot sauce, optional
  • 1/2 (40 g) small yellow onion, peeled
  • 2 garlic clove, peeled
  • ½ teaspoon ground white pepper
  • 4 cups (640 g) peas, cooked

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed.
  3. Blend for 45 seconds, using the tamper to press ingredients toward the blades. Transfer, to a bowl and serve immediately, or refrigerate until ready to eat.
