This creamy, classic sauce is so easy to make, it may just become a weekly brunch addition.
- 6 large pasteurized egg yolks
- 2 Tablespoons fresh lemon juice
- ¼ teaspoon salt, optional
- 2-3 dashes of your favorite hot sauce
- 1½ cup (360 ml) melted butter, warm
- Place the egg yolks, fresh lemon juice, salt, and hot sauce into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to Variable 8.
- Blend for 30 seconds.
- Remove lid plug and slowly add melted butter in a thin steady stream, until mixture becomes thickened, approximately 55 seconds. Serve immediately.

Rated 4 out of 5 by Schteepo from So Easy! This is such an easy way to make a sauce that is somewhat challenging by hand. The one star reviews are ridiculous, any time you change a recipe it's unfair to give it a bad review. Vitamix are especially sensitive to minimum quantities. I used the 64 oz compact jar and followed the recipe and my sauce came out very nicely. I thought it was little too o thick and thinned it with water which had no negative effects. I used bottled lemon juice and would recommend using fresh lemon, I think there would be a noticeable difference. I would make this again. It was so fast and easy and tastes way better than a powdered sauce base.

Rated 5 out of 5 by Oddie from Perfection! This was simple and delicious. I followed the directions and it came out beautifully. Only thing I changed was speed, when I got it past 4 drizzling in the butter it started shooting out the top so I just kept it at 4 and it didn't change a thing. I even had left overs that I used for dipping artichokes the next day and it reheated in the microwave on low for 25 seconds without breaking. I will definitely be making this again! I LOVE my Vitamix, even made whole wheat flour from berries this week in less than 2 minutes! Thank you Vitamix for such a superior product :0)

I do add just a bit more lemon juice, which suits my taste. If the consistency is a little thick, I just add a little water to thin it a tad. This is just another way Vitamix streamlines something that used to be complex, into a very simple task.

Rated 5 out of 5 by Anonymous from Perfect first time and scrumptious! This was only the third recipe I made in my Vitamix and the first in my Aer Disc Container. Perfection!! (My daughter confessed afterwords that she had tried making Hollandaise sauce many times on her own and wasted many, many eggs and even more butter!) This sauce is SO delicious (albeit unhealthy). Served it over an toasted open-faced egg & bacon sandwich and was incredible. Will be heading out soon to buy steaks and asparagus to use the rest of it! Yum!!

Rated 1 out of 5 by Kokoris from Definitely does not work for half batches I just received this Vitamix this week so I thought I'd try the hollandaise recipe which I normally make by hand. Says there's only two of us I did not need the large recipe so I cut it in half. Really really bad idea. Apparently 3 egg yolks is not enough to actually do anything with the aerator and therefore when I added the warm butter gradually it was just a runny mess. I am going to stick we're doing this by hand because it makes a luxurious and rich sauce. From now on I'm just going to assume that the recipes for this machine cannot be made in smaller batches than the actual recipe ingredient requirement.
