Chef's Notes

  • When using alternative flours, measuring by weight instead of volume helps tremendously as each flour absorbs liquid differently. The batter can be adjusted with more flour or liquid as needed. Select an alternative flour according to your taste - each has its own flavor profile; for example, bean flours are very savory, while oat flour has a mild flavor.
