Orange Chocolate Nut Cake
A crust of almonds, dates, and coconut oil is the foundation of this cold cake, which is complete with a chocolatey orange filling.
Ingredients
- 1 cup (140 g) raw almonds
- ½ cup (80 g) dates, pitted
- 3 Tablespoons coconut oil, softened
Directions
- Place almonds, dates and coconut oil into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 1 minute, using the tamper to press ingredients into the blades.
- Scoop mixture onto an 8-inch (20-cm) spring form pan, or push pan. Press the mixture into the sides and bottom of pan.
- Place in freezer to set.
- Place cashews, juice, agave, cocoa powder, salt, extract and coconut oil into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 1 minute, until the mixture has the consistency of a thick pudding.
