Radish and Kimchi Soup

This rich soup is sure to excite your taste buds with plenty of umami from both the broth and kimchi.

Ingredients

  • 1 (350 g) daikon radish, quartered
  • 3 cups (240 ml) water
  • 1 cup (230 g) tofu, chopped
  • 1 cup (140 g) white fish (cod, sole, pike), chopped
  • 1 Tablespoon shredded nori
  • ½ cup (75 g) kimchi
  • ¾ teaspoon salt, optional

Directions

  1. Place the radish and water into the Vitamix container and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 20 seconds.
  3. Pour the broth into a medium-sized saucepan and add fish, nori, and tofu. Bring to a boil and add salt, optional. When desired flavor is reached, divide kimchi evenly between bowls and pour broth over.
