Roasted Beet and Green Bean Salad with Arugula and Shaved Apple
The balance of flavor and texture makes this salad a masterpiece. The texture changes with every bite from soft roasted beets, goatcheese, crispness of apples and green beans to the crunch of pepitas.
Ingredients
- 1 ½ pound (675 g) beets, roasted, diced
- 1 pound (450 g) green beans, blanched
- 6 cups (360 g) arugula
- 1 medium (200 g) apple, shaved
- 8 ounces (225 g) goat cheese, crumbled, optional
- ½ cup (100 g) pepitas, toasted
- 1 ½ cups (360 ) Winter Spice Vinaigrette
Directions
- Place beets, green beans and arugula in large, stainless steel bowl and toss with 1 cup Winter Spice Vinaigrette. Transfer to serving bowl.
- Distribute the apple, goat cheese and pepitas neatly on top of the arugula and green beans and finish with additional dressing, as desired.
