Sesame Bagels

Skip a run to the bakery, these fresh bagels can be made in your own kitchen in the Vitamix food processor.

FPA - Sesame Bagels

Ingredients

  • 1 teaspoon honey
  • ½ cup (120 ml) warm water
  • 1 Tablespoon (7 g) instant fast-rise yeast
  • 3¼ cup (500 g) all-purpose flour
  • 1 teaspoon kosher salt, optional
  • ¾ cup (180 ml) water
  • 1 Tablespoon olive oil
  • 2 Tablespoons (30 ml) honey
  • 1 teaspoon kosher salt, optional
  • 1 teaspoon honey
  • raw sesame seeds, as needed, or other desired topping

Directions

  1. Preheat oven to 400°F (205°C). Fit the Food Processor with the Multi-Use Blade.
  2. Combine 1/2 cup (120 ml) warm water, yeast, and 1 teaspoon honey in a small bowl and whisk together. Let stand for 10 – 15 minutes. Place flour and 1 1/2 teaspoons kosher salt into the Vitamix container and secure the lid. Pulse the mixture 3–4 times to incorporate.
  3. Pour the yeast mixture into the container and start the machine. Process for 15 seconds.
  4. Combine the 3/4 cup of lukewarm water, 1 tablespoon olive oil, and 2 tablespoons honey. Remove the Small Food Pusher from the Small Food Chute, and with the machine running, pour the mixture through the opening. Process for an additional 25–30 seconds or until the dough forms around the blade.
  5. Remove dough from the processor bowl and knead by hand for 1–2 minutes. Place into a warm bowl and cover with a kitchen towel until dough rises, about 20–30 minutes.
  6. Fill a medium sized pot with water and place over medium-high heat for boiling bagels. Once boiling, add 1 teaspoon kosher salt (optional) and 1 teaspoon honey (optional.) Portion dough into 6–8 pieces, depending on desired size. Roll between your hands to get an 8-inch (20cm) rope. Combine ends and pinch together to form a ring-shaped bagel.
  7. Place 2–3 bagels into boiling water (depending on pot size) and cook for 35–45 seconds. Flip gently with a perforated skimmer, and cook for 10 more seconds. Remove from pot with skimmer and place onto a clean kitchen towel. Dip the tops of each bagel into sesame seeds or other seasoning. Place on a parchment-lined sheet tray and bake for 20–30 minutes until golden brown and cooked through.

Chef's Notes

  • Keep moisture in the oven during the baking process by placing a small, oven-safe pot of boiling water beneath the bagel rack.
  • Control what goes into your body by making your own bagels at home. Salt-free everything bagel seasoning is also a great choice as a topper.
