Sourdough, Pistachio and Apricot Stuffing

A unique spin on traditional stuffing, perfect for stuffing turkey or chicken.


  • 1 Tablespoon extra virgin olive oil, optional
  • ½ red onion, peeled, diced
  • 1 garlic clove, peeled
  • 3 slices bacon, cooked, crumbled
  • 2 slices Sourdough bread, day-old
  • ½ cup pistachios
  • ½ cup (125 g) dried apricots
  • 2 sprigs fresh thyme leaves
  • small handful fresh tarragon
  • Juice of ½ lemon


  1. In a nonstick frying pan, heat oil and sauté onion, garlic and bacon for a few minutes until softened and browned.
  2. Place sourdough bread into the Vitamix Container and secure lid.
  3. Select Variable 1.
  4. Turn machine on and slowly increase to Variable 4. Use the tamper to press ingredients into the blades.
  5. Blend until bread is processed into breadcrumbs.
  6. Pour breadcrumbs into a mixing bowl.
  7. Place pistachios and apricots into the Vitamix Container in the order listed and secure lid.
  8. Select Variable 1.
  9. Turn machine on and slowly increase speed to Variable 4.
  10. Blend until roughly chopped.
  11. Add pistachio and apricot mixture to breadcrumbs.
  12. Add the sautéed onion mixture to the bowl, along with thyme, tarragon and lemon juice. Mix well to combine, adding a little more extra virgin olive oil if needed.
  13. Use the mixture to stuff turkey or chicken, or spoon into a loaf tin and bake at 350°F (180°C) for 20-30 minutes.
