Sourdough, Pistachio and Apricot Stuffing
A unique spin on traditional stuffing, perfect for stuffing turkey or chicken.
Ingredients
- 1 Tablespoon extra virgin olive oil, optional
- ½ red onion, peeled, diced
- 1 garlic clove, peeled
- 3 slices bacon, cooked, crumbled
- 2 slices Sourdough bread, day-old
- ½ cup pistachios
- ½ cup (125 g) dried apricots
- 2 sprigs fresh thyme leaves
- small handful fresh tarragon
- Juice of ½ lemon
Directions
- In a nonstick frying pan, heat oil and sauté onion, garlic and bacon for a few minutes until softened and browned.
- Place sourdough bread into the Vitamix Container and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase to Variable 4. Use the tamper to press ingredients into the blades.
- Blend until bread is processed into breadcrumbs.
- Pour breadcrumbs into a mixing bowl.
- Place pistachios and apricots into the Vitamix Container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 4.
- Blend until roughly chopped.
- Add pistachio and apricot mixture to breadcrumbs.
- Add the sautéed onion mixture to the bowl, along with thyme, tarragon and lemon juice. Mix well to combine, adding a little more extra virgin olive oil if needed.
- Use the mixture to stuff turkey or chicken, or spoon into a loaf tin and bake at 350°F (180°C) for 20-30 minutes.
