Soyannaise
A satisfying variation of classic mayonnaise, this easy-to-make recipe includes tofu as its main ingredient.
Ingredients
- 2 ¼ ounces (70 g) water
- 1 cup (150 g) tofu
- 3 Tablespoons (45 ml) extra virgin olive oil
- 1 Tablespoon (1 Tablespoon) fresh lemon juice
- 1 teaspoon (1 teaspoon) dry mustard
- 1 teaspoon (1 teaspoon) honey
- ¼ teaspoon (0.25 teaspoon) salt, optional
- ⅛ teaspoon (0.12 teaspoon) ground black pepper
Directions
- Combine all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Start the machine, and slowly increase to its highest speed.
- Blend for 40 to 45 seconds or until smooth and creamy.
