Tropical Popsicles

Blend ripe mango chunks, coconut milk, a touch of honey, and lime. Pour the mixture into popsicle molds and freeze for a delicious summer treat. Layer for a great picture!

Tropical Popsicles

Ingredients

  • 1 ½ cups (360 ml) coconut water [or Passionfruit Kombucha]
  • 1 orange, peeled
  • ½ lime, peeled
  • 2 Tablespoons (30 ml) honey, optional
  • 1 (300 g) mango, peeled, pitted and chunked
  • 1 can (400 ml) coconut milk, mixed well

Directions

  1. Place coconut water, orange, lime, honey and mango into the Vitamix container in the order listed and secure the lid.
  2. Run the Smoothie Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 40 –50 seconds, using the tamper to push ingredients toward the blades.
  3. Pour the coconut milk evenly into the popsicle molds this should be 1/4 to 1/3 full. Carefully pour the blended mixture on top of the coconut milk. Using a skewer swirl the two mixtures together to create a marbling effect.  Freeze for 4 – 6 hours.

The honey is optional and with all of the sweetness from the orange and mango, you may find you don't need it!
